Lately I have been craving Taco Bell SO badly but refuse to allow myself to indulge in that garbage (no offense Taco Bell, I love you, really..) so being the whiz in the kitchen that I am, I decided to make my own! At long last I've moved back in with my family, so since my sister and I had a night in together for the first time in forever, I figured it would be a good time to try this out!
Also keep in mind, there are loads of possibilities for customization, and making it vegan is also very possible by substituting dairy-free options!
INGREDIENTS:
- large flour or corn tortilla
- small tostada shells (I didn't want to purchase any so I opted for some multigrain Tostitos chips which I will get MUCH more use out of!)
- queso sauce
- protein: meat if you're interested (chicken, beef, etc) or beans (black, pinto, refried etc)
- shredded lettuce
- shredded cheese
- diced tomatos
- sour cream (or plain greek yogurt for a healthier alternative)
- basically anything else you feel could go with it!
DIRECTIONS:
- warm your tortilla up a bit, to ensure it's easy to bend/fold etc
- put a dollop of queso in the centre and spread, but leave a wide edge for wrapping it later
- on top, put your protein in (meat, beans, etc)
- place the tostada shell or tortilla chips on top to create the crunchy layer
- spoon a dollop of sour cream/greek yogurt over the shell and spread
- sprinkle on the lettuce, cheese and any other vegetables
- then you're going to wrap the edges of the tortilla up to cover the filling
- if it doesn't fit, rip off part of another tortilla and put it inside on top of the lettuce/cheese layer
- (the hardest part) flip your wrap onto a non-stick pan with the fold side down
- press down on the wrap to ensure the folds seal and brown
- flip it over just to heat the queso side up a bit
- you're ready to eat!
I am OBSESSED and will definitely make these again, they were so good! My super picky sister even loved them, and now we have a newfound adoration of queso sauce.. mmm queso sauce. If you try these let me know how you do!
