Spinach & Goat Cheese Frittata

Hello hello hello! Yesterday morning due to the horrible ice storm we had (thanks Canada..) my brunch plans ended up changing to me making myself something at home. I decided (for the first time) to make a Frittata, and was quite pleased at the results, so I figured I'd share them :) 

This makes for a small frittata, serves around 2-4 people depending on how hungry you are!

Ingredients:
  • Spinach
  • 5 Eggs
  • Goat Cheese
  • Olive Oil
Directions:
  • Preheat the oven to 400F
  • In a frying pan, heat enough olive oil to cover the pan
  • Add desired amount of spinach and cook until wilted, I did 3 cups, my pan was rather small so I slowly added he spinach in there and did it bit by bit, just be cautious as you don't want to over cook it, as this takes away all of the nutrients

  • While the spinach is wilting, beat the eggs in a bowl (as if you were scrambling them)
  • Once spinach is cooked to desired texture, pour the beaten eggs over the spinach, season with salt and pepper if you would like
  • Spinkle with goat cheese, I chose to do mine in little slivers and cover majority of the eggs

  • Cook over low heat until the mixture begins to set around the edges, approximately 1-2 minutes
  • Transfer to the oven and bake until the egg is set and the top is golden brown, approximately 10 minutes

  • Let cool a bit, Slice into wedges then serve
